An artisan cookie from Cusco made with amaranth. Amaranth or "kiwicha" has essential amino acids such as lysine, methionine, and cysteine, which have a fundamental factor for the organic and mental development of human beings. Cusipata was founded in 1921, in the District of Cusipata, Province of Quispicanchis located in Cusco at 3400 masl. The name refers to the town it belongs to, "Cusi" means "happy" or "happiness" and "Pata" means "place" or "space" and together it could be translated as "Place or space of joy."
