Golden roots known as “arracacha” are a type of carrot that grow in the Peruvian Andes around 2000 masl. Arracacha roots are quite mysterious and shy since you can find it only in some local markets in Peru. It is bursting with vitamins, fiber, and antioxidants, which has a lovely and delicate taste it is complement with a sprinkle of Andean pink salt. This a delicious crunchy snack that can be served with salads or soap. Yummy!
