The cultivation of our huacatay is carried out in uncontaminated fields above 2800 meters above sea level, so the vegetative periods are long and the flavors, aromas and colors are considerably concentrated. Huacatay is widely used in sauces and dishes in Peruvian cuisine. Huacatay Kuski is dehydrated in our plant and contains no additives. Tagetes minuta has been eaten in various forms since pre-Columbian times. Dried leaves may be used as a seasoning and huacatay paste is used to make the popular Peruvian potato dish called ocopa. An herbal tea can be brewed from the leaves.
